1 pkg egg white wraps
1 lb leftover chicken (can cook 1 lb of chicken breast and use in this recipe)
2 cans green enchilada sauce
1 cup light sour cream
1 container (5.6 ounces) Greek yogurt (PLAIN)
1-2 cups shredded cheese
Preheat oven to 375. Spray 9 x 13 pan with non stick cooking spray.
Using a sharp knife, cut egg life wraps into small pieces. Place aside.
In a medium size bowl, combine enchilada sauce, sour cream, and greek yogurt.
Layer ½ of egg life wraps, chicken, and enchilada sauce mixture. Top with ½-1 cup cheese.
Layer remaining egg life wraps, chicken, and sauce. Top with remaining cheese.
Bake for 40-50 minutes.
Serve!
